With an electric mixer on medium speed, beat the egg into the flour mixture until smooth. Beat in the egg white until smooth, then beat in the Parmigiano-Reggiano, sage, and hot red pepper sauce until well combined, about 1 minute. Remove the beaters and stir in the crabmeat.4. Drop by tablespoonfuls onto the prepared baking sheet, spacing the mounds about 1 inch apart. Set the sheet aside for 10 minutes to air-dry the mounds.5. Bake until golden brown and puffed, about 30 minutes. Cool on the baking sheet for 2 minutes, then cool on a wire rack for at least 10 minutes or until room temperature.Shrimp Sage Puffs: Substitute 6 ounces medium shrimp, peeled, deveined, and cooked, for the crabmeat. Recipe #1 - CHOCOLATE ICE CREAM4 egg yolks, lightly beaten1 cup sugar2 cups table cream (18% milk fat)1 1/2 cups milk1/2 cup cocoa powder (sifted)2 tsp pure vanilla extractBeat egg yolks lightly. Beat in sugar. Heat the cream/milk on the stove. As it's heating, beat in cocoa powder. Heat cream/milk/cocoa mix until steaming. Stir into egg/sugar mix. Add vanilla extract. Cool. Freeze in ice cream maker.Recipe #2 - CHOCOLATE BANANA3 eggs1 cup sugar2 oz bittersweet chocolate2 cups table cream (18% milkfat)1 1/2 cups milk6 tablespoons cocoa powder1 tablespoon vanilla extract3 over-ripe bananasJuice of 1 lemonBeat eggs lightly. Beat sugar in to eggs. Melt chocolate in milk and cream. When chocolate partially melted, stir in cocoa powder.Continue stirring chocolate/cream mixture until hot but not quite boiling. Stir hot chocolate/cream mixture in to eggs. Stir in vanilla extract. Cool.When ready to make, mash bananas and lemon juice togetherMake chocolate mixture in ice cream maker. Just before ready, add banana mixture. Note: Use good quality, *very* ripe bananas. Otherwise your ice cream will have a strange flavor.Recipe #3 - CHOCOLATE CHIP COOKIE DOUGH2 c Milk1 3/4 c Sugar1/2 ts Salt2 c Half & Half1 tb Vanilla Extract4 c Whipping CreamPillsbury Chocolate Chip - Cookie Dough (large size) - OR homemade cookie doughTake the chocolate cookie dough out of fridge and leave out till needed. Scald milk until bubbles form around edge. Remove from heat. Add sugar and salt. Stir until dissolved. Stir in half and half, vanilla, and whipping cream. Cover and refrigerate 30 minutes. Freeze as directed by your ice cream machine's instructions.Once ice cream has been through the entire ice cream machine process and is now a chilled soft ice cream, add the chocolate chip cookie dough. Just break up the dough as best you can with your hands and drop it in small clusters into the soft ice cream. Add the cinnamon, stir to mix and place in a dish to cool. Next, make the cake...4. Cream the butter and the sugar together.5. Beat in the egg and milk and fold in the flour.6. Spoon the mixture into the prepared tin.7. When the apple and honey mixture is cool, spread it over the cake mixture. Finally, make the topping.8. Melt the butter in a pan with the sugar over a very low heat. Remove from the heat and stir in the oats.9. Spread this over the apple layer and bake for 55-60 minutes. Test to see if the cake is cooked by inserting a skewer into the centre; if the cake is done, the skewer will come out clean. If it isn't done, put the cake back in the oven and bake for 5 more minutes.10. Cool the cake in the tin for 20 minutes before transferring to a cooling tray or wire rack. Remove the paper after about 5 minutes. This will keep for 4-5 days in an airtight container.Variations:Stew 100g of prepared gooseberries with 3 tablespoons honey until soft and allow to cool before using like the apples.Stew 120g chopped rhubarb and 3-4 tablespoons honey until soft, cool and use in the same way as the apples.Tip: For a slice able cake, make sure the apples are cold before cooking. If you want more of a pudding-like consistency, use warm apples to put on the cake, but put on the topping immediately and bake as quickly as you can, or the cake base will melt.Follow the easy directions very carefully and you will be surprised how good this recipe really is. Heat through, stirring gently. Drain pasta.
